Korean Cucumber Salad

Salads get such a bad rep! They don’t have to be all about throwing flavourless vegetables around. First of all, vegetables have so much flavour in them naturally! I love having a little side of raw vegetables almost at every meal. This is by far one of my favourite salad sides ever. This spicy and smoky salad goes well with Indian and other South Asian dishes.

Serves 4

Ingredients:

Cucumbers 2

Green scallions or spring onions 3 full stalks, chopped

White vinegar 1 1/2 tsp

Soy sauce 1 tsp

Garlic 1 clove, minced

Salt 1/2 tsp

Sugar 1/2 tsp

Red chilli flakes 2 tsp

Sesame seeds 1 tsp

Method:

  1. Slice the cucumbers crosswise into pieces that are about ? inch thick. Place those cucumber slices into a mixing bowl along with a chopped scallion.

  2. Then in a separate small bowl, mix white vinegar with a teaspoon of soy sauce and a minced clove of garlic. In the same bowl, stir in a half teaspoon each of salt and sugar – and keep stirring until both have dissolved in the liquid.

  3. Next, just pour the sauce over your scallions and cucumber slices.

  4. Finally sprinkle about two teaspoons red chili pepper flakes and a teaspoon of sesame seeds over the top and mix well.

  5. Eat it!!
