Pumpkin And Beans Chilli

This is the season of pumpkin and I am constantly thinking of recipes to use them. As most of my recipes are focused on being a full, hearty meal, I decided to use it in a chilli for a perfect dinner. Want to try it for dinner tonight? Here it is!

Serves 4

Ingredients:

Black beans, cooked 1 cup

Pumpkin, chopped in chunks 1 cup

Onion, finely chopped 1

Red bell pepper, diced 1

Garlic, 3 cloves finely chopped

Chilli powder 2 tbsp

Oregano 1 tbsp

Cumin, roasted and ground 1 1/2 tsp

Tomatoes, roasted 1 cup

Salt to taste

Black pepper to taste

Coriander, fresh chopped

Method:

  1. Heat oil in  thick bottomed pan. Cook the onions till they are translucent, add the garlic and then tomatoes.

  2. Once the tomatoes are cooked and turn into a mush, add the chilli, cumin and salt. stir in the bell pepper, pumpkin, the beans , cover and cook for 5 minutes or till the pumpkin is soft. Add 1 cup of water or vegetable broth.

  3. Add the pepper, the cilantro and cook till it turns into a stew.

  4. Garnish with coriander and serve hot.
