Smoky Little Devils – Stuffed potatoes recipe

Potatoes! Who doesn’t love this little devils?! Well, unfair to call them devils, they get a bad rap for no reason. Potatoes while being predominantly carbohydrates (you need carbs too!) also have Calcium, Potassium, Niacin, Ribolflavin and Vitamin C. This starter is also filled with protein and will definitely not make you feel guilty if you have slightly more than what you should!

Serves 4

Ingredients: 

FOR THE HUMMUS:

  1. Chickpeas, cooked and drained 1 1/2 cups

  2. 2 large cloves garlic

  3. 2 tablespoons fresh lemon juice

  4. 1½ tablespoons spicy brown mustard, or to taste

  5. Freshly ground black pepper, to taste

  6. ¼ teaspoon salt or to taste

  7. 1 cup chopped green onions (4 to 5)

  8. 2 teaspoons Dijon mustard, or to taste

  9. Zest of 1 lemon

  10. 1½ to 2 additional tablespoons fresh lemon juice, to taste

FOR THE DEVILS

  1. 12 small potatoes, steamed and cooked

  2. Pinch of smoked paprika, for garnish

  3. 1 green onion, finely sliced, for garnish

  4. Green Onion Hummus

Method:

  1. To make Hummus, in a food processor, combine the chickpeas, garlic, lemon juice, mustard, pepper to taste, salt (if using), and 2 tablespoons water, and process until uniformly smooth.

  2. In a small bowl, stir together the hummus, green onions, Dijon mustard, lemon zest, and additional lemon juice. Dollop or spread on immediately or store in an airtight container until ready to use.

  3. Slice each potato in half. With the small end of a melon-baller or a small spoon, scoop out a hole in the center. (Save the little scooped-out potato balls to put into a salad or just pop them into your mouth!)

  4. Fill each hole with hummus. Sprinkle with smoked paprika. It is easiest to take a tiny bit between your fingers and sprinkle just enough for the color to show. Garnish with green onions.

Remember to not eat it all by yourself!!
